With sunny days and warm nights, the month of September can assure the fine maturity of grapes sought out by our domain.
We set up surveillance twice a week, and roam the entire vineyard to visually analyze the maturity of the grapes, as well as testing the flavor.
The fineness of the skin layer, the brown color of the seeds and the progression of sweetness are the 3 factors that determine the date of harvest.
